Cook the sliced zucchini, chopped celery, green pepper and onion in the margarine until tender. Add cooked rice, sliced olives and seasonings and mix well.
Place in a 12 x 8 inch baking dish. Top with cooked chicken breasts. Bake at 350 degrees for 20 minutes. Then overlap 2 slices of cheese on each chicken breast. Return to oven until cheese melts.
